Eat
[edit]The flat land of Bassa Veronese, south of Verona, is used for agriculture. Rice has been cultivated in the marshland since the 15th century. The local variety is Vialone Nano Veronese , which is particularly suitable for melt-in-the-mouth risotto dishes. One of the region's most popular dishes is risotto all'isolana , with veal, pork loin, and a hint of cinnamon.
The "Cittá di Riso" (Rice City), Isola della Scala, is located amidst rice fields. Rice producers Ferron, Ranch, Melotti, del Vò, Riccò, and the La Pila Cooperative all operate shops in or around the town. There, you can buy the local, high-quality rice. Starting in mid-September, the Fiera del Riso ( Rice Fair) takes place for several weeks, where chefs serve around 300,000 portions of risotto to visitors each year.
Risotto al tastasal is a typical first course in Verona. The tastasal is a mixture of minced pork seasoned with black pepper and salt, similar to salami. The risotto is usually garnished with a pinch of nutmeg and grated Parmigiano Reggiano.Risotto all'Amarone is one of the locals' favorite dishes. It uses only local ingredients: Vialone Nano rice, Amarone wine, and Monte Veronese cheese.
