Eat
[edit]Belluno's cuisine has its origins in the Dolomites, with simple and unpretentious dishes. Soups are often prepared with beans, barley, nettles, or mushrooms. The primo (first course) often consists of vegetables, legumes, or wild berries. The secondo (main course) often features rabbit, chicken, game, or pastìn.
The Lamon PGI bean is small, round, white-pink with purple stripes. It is used in soups and salads, or simply cooked with onions and oil. It has been cultivated on the Lamon plateau since the 16th century.
Pastìn is a typical Belluno dish. Minced pork and beef are salted and spicy like sausage, or simply freshly prepared salami is used. The mixture is eaten raw on bread or grilled. A typical sandwich is a pastin and grilled cheese sandwich, served at Belluno's village festivals.
Panada is a typical dish made from stale bread with olive oil, salt and sage. Gnocchi di Zucca are pumpkin dumplings served with grated smoked ricotta cheese and melted butter.
Montasio DOP is a typical hard cow's milk cheese from the Belluno region. It is also produced in the provinces of Friuli-Venezia Giulia and Treviso , and partially in the provinces of Venice and Padua. After two months of maturation, bacteria naturally render it lactose-free. When young, Montasio is eaten with bread, and a little older it is used for gratinating.
